This is where everything starts.


Our pasta is made by hand in small batches using premium Italian flour, fresh eggs, water, and salt. Nothing else. The dough is mixed slowly, rested properly, and rolled with care to develop structure, elasticity, and a clean, tender bite.


We don’t rush this process. Time matters here. Resting the dough allows the flour to fully hydrate and the gluten to relax, which is what gives the pasta its smooth texture and gentle chew. When cooked, it holds sauce beautifully without ever feeling heavy.


This pasta is simple by design, but deeply satisfying. It tastes like wheat and egg. It has body. It has balance. It turns even the most basic sauce into a real meal.
